Shiitake Soba Noodle Salad
Soba noodles, shiitake mushrooms, and crispy snap peas drenched in a sweet and savory Thai-style peanut or almond sauce.

Kitchen equipment you’ll need: food processor or high-speed blender
Ingredients:
1 8-oz package buckwheat soba noodles
1 lb. shiitake mushrooms, chopped
1 lb. sugar snap peas, diagonal chopped
1 Tbsp coconut oil
3 green onions, chopped
Thai-Style Sauce Ingredients:
½ cup peanut butter or almond butter
1 Tbsp fresh ginger, roughly chopped
2-3 cloves garlic, roughly chopped
2 Tbsp lime juice
2 Tbsp honey
1 tsp coconut aminos or tamari
½ cup water or coconut water
optional: ¼ - ½ jalapeno
Directions:
Prepare noodles according to package directions.
While noodles are cooking, saute mushrooms and snap peas in coconut oil. Season with salt to taste.
For the sauce, combine all ingredients in a food processor or blender and puree until smooth. Add more water if needed to reach desired consistency.
Combine noodles with sauteed mushrooms and snap peas, drizzle with a generous amount of sauce, and garnish with green onions.

Prepare the sauce at home ahead of time. Saute veggies and prepare noodles at your campsite, then combine with sauce to serve.
