Vanilla Panna Cotta
A decadent delight. Top with grated chocolate, or take advantage of fresh seasonal fruit by topping with pomegranate seeds or raspberries.

Ingredients:
1 15-oz can full-fat coconut milk
2 tsp agar flakes (plant-based gelatin)
⅓ cup coconut sugar
1 tsp vanilla extract
¼ cup freshly grated artisan chocolate, or fresh seasonal fruit
Directions:
In a small saucepan, bring the coconut milk to a gentle simmer. Add agar and whisk vigorously until well-combined, about a minute. Remove from heat and let cool for about 15 minutes (to let the agar gelatin “bloom”).
Add sugar and vanilla, then bring to a simmer over medium heat, whisking vigorously.
Pour mixture into 3-4 small glasses or ramekins and refrigerate at least 3 hours or until set.
To serve, top with freshly grated chocolate or seasonal fruit.
