Kiwi-Strawberry Fruit Chews

A DIY version of your favorite fruit roll-ups, minus the preservatives and high-fructose corn syrup.

Prep time: 15 minutes
Chill time: 5+ hours
Servings: 6-8

Kitchen equipment you’ll need: food processor or high-speed blender, mesh strainer, dehydrator

Ingredients:

  • 3 cups strawberries, halved

  • 1 cup kiwis, skinned and halved

  • Coconut sugar, to taste

  • 1 Tbsp lemon juice

Directions:

Combine all ingredients in a food processor and blend until smooth. (This may need to be done in batches, depending on the size of your machine.)

Pour the mixture through a mesh strainer to remove the seeds. You may choose to add back in ΒΌ to β…“ of the seeds for extra texture and fiber.

Cut sheets of parchment paper to fit your dehydrator trays. Use a spatula to spread the mixture in thin, even layers on the parchment paper. Dehydrate at 125F for 5-6 hours or until the mixture is leathery and chewy.

Use a pizza cutter to slice leather into 3” strips. Roll into β€œroll-ups” if desired.
